Move over, beans! There’s a new kid on the flatulence block.
Commonly called sunchokes or Jerusalem artichokes, but more appropriately named Fartichoke, these came in my farm box. I googled recipes. However, most titles were pretty disturbing.

Why You Might Want to Take it Slow with Sunchokes
Do Jerusalem Artichokes Cause Diarrhea?
and my favorite:
Taking the Wind out of Jerusalem Artichokes

I eventually chose this recipe and it was delicious! I could have eaten the whole lot, but decided to wait and see what impact the chokes would have on my digestive system. Their delayed effects on my insides? Well, let’s just say that that which does not kill us makes us stronger. I’m a lot stronger now.

I've only had them once to no ill effect, and they were delicious!
I don't think you can get them around here very easily.

I'm glad you had a good experience! Mine came in my Farm Fresh to You box, but I'm not sure if they're grown around here or not.

We used to grow them in our garden in Oklahoma and they are delicious. Guess at the time we were consuming so many fresh veggies that we didn't notice the issue of which you speak
