Horned Melon Cucumber

This Horned Melon Cucumber came in my farm box today.  Those horns are really sharp, by the way..

The inside is divided into little chambers full of seeds surrounded by green slimy stuff.

I scooped it out with a spoon and got this little bowl full of gloppy goo. According to google, you eat this goo.  It tastes similar to a cucumber, but sweeter and liquid-y.
The seeds are edible, but pretty tough and I had to just give up and swallow them half-masticated.  I’m sure they’ll turn up again.  Like corn that’s been too hastily chewed.  If you know what I mean.

Final analysis:
Interesting, not bad tasting, but the seeds make it too much work.  My search for interesting and tasty vegetables goes on.  This one was just interesting.
