I actually like romanesco. It has the crunchy texture of cauliflower, but it’s green so I suppose it has more nutrients. My math friends have pointed out the it also utilizes the fibonacci sequence, which makes this a very cool vegetable for math people. I just think it’s beautiful. I did my usual blanch/stir fry with butter and salt routine. Totally edible.
